Quality of raw milk informally sold in the city of Itaqui, Rio Grande do Sul, Brazil

The objective of this work was to evaluate the quality of informally commercialized raw milk in the city of Itaqui, RS. Various producers provided a total of 21 samples of milk, which were then identified and investigated for fraudulent compounds (chlorine, hypochlorites, hydrogen peroxide, formaldehyde, acid neutralizers, starch, urine, and sucrose), physical-chemical analysis [density, fat content, total dry extract, solids-non-fat, protein content, and titratable acidity], microbiological analysis, antibiotic residues, and somatic cell count (SCC). In the results, sample 8 showed the presence of acid neutralizers. Samples 7 and 15 presented density values in disagreement with the current legislative standards. With regard to the fat content, 33.3% of the samples did not meet the requirements of the Normative Instruction 62/2011, as well as 57.1%, 61.9%, and 61.9% of the samples presented values of SCC, ESD, and acidity that exceeded the allowed parameters, respectively. Considering the total count of microorganisms, 61.9% of the milk samples showed a value greater than that allowed by the standards of legislation. In addition, it was found that 23.8% of the samples contained antibiotic residue. Therefore, it was observed that all of the milk samples presented with at least one parameter in disagreement with current Brazilian legislation.Downloads
